From Our Recipe Box to Yours...

     It's Super Bowl Sunday this weekend!!! And you know what that means? Food! Yummy yummy Food!! Oh and funny commercials too!:) Not to mention football....

     Here's a recipe one of  my coworkers tried out on us the other day at staff meeting! Yum and what a perfect Super Bowl Sunday treat!

Feta­Stuffed Buffalo Chicken Meatballs by Iowa Girl Eats
MAKES 16 MEATBALLS

 Ingredients
1lb ground chicken breast
1/4 small red onion, grated or minced
2 gloves garlic, microplaned or minced
1 egg white
1/2 cup panko bread crumbs
1 Tablespoon powdered Ranch Dip mix
4oz block feta cheese, cut into 1/2” cubes
2 Tablespoons butter
1 cup Frank's buffalo wing sauce

Instructions
Preheat oven to 400 degrees. Stir together red onion, garlic, egg white, bread crumbs, and ranch dip mix in a large bowl. Add ground chicken then mix until just combined. Divide mixture into quarters, then each quarter into 4 balls. Press a cube of feta into the center of each ball into quarters, then each quarter into 4 balls. Press a cube of feta into the center of each ball then close mixture around cheese to seal. Place meatballs onto a non­stick sprayed cooling rack set on top of a baking sheet, then bake for 16­18 minutes, or until cooked through. Meanwhile, melt butter in a large skillet over medium heat then add buffalo wing sauce and stir to combine. Add cooked meatballs to skillet then use a spoon to coat in sauce. Place a lid on top and turn heat to low to keep warm.

More proof reading fiction is not only entertaining, but beneficial...

     Bibliotherapy...defined as....
  1. the use of books as therapy in the treatment of mental or psychological disorders.

This idea of giving books to people/teens dealing with difficult issues in which they may be able to connect or relate to the characters in a book and therefore keep moving on/feel better about themselves, it has a name. Bibliotherapy. And a following. And, I've been trying to do this for years...I just didn't know it had a name. :)
     It really makes a lot of sense, doesn't it? We all know that we feel better when we don't feel alone in our problems. Books can do this for people. The characters in a book can be a best friend that lends comfort when we get lost in their story, or it can be the other gangly teen going through the same awkward stage that we are and getting made fun of. Ultimately, there is power found in the words and on the pages of books just waiting for us to sit down and begin to read...

Little Free Library

  What is a Little Free Library? The website www.littlefreelibrary.org says, "It's a take a book, return a book gathering place where neighbors share their favorite literature and stories. In it's most basic form, a Little Free Library is a box full of books where anyone may stop by and pick up a book or two and bring back another book to share! You can too!"
     The Little Free Library movement began in 2009, when Todd Bol of Hudson, Wisconsin built a replica of a one room schoolhouse as a tribute to his mother who was a teacher. He put it in his front yard and filled it with books. His friends and neighbors loved it. He built several more and gave them away. Each one had a sign FREE BOOKS. Thus began the Little Free Library Movement. Now with a mission of spreading literacy and a love a reading worldwide this movement is well on its way of reaching their goal of 2,510 libraries, the number of libraries, as many of Andrew Carnegie...
    



There is actually one right here in Waverly that you can visit. It is located along the sidewalk at Eichhorn Haus. Go check it out! Maybe take a book and leave one for the next person...Maybe be inspired to make your own?
