From Our Recipe Box to Yours...

     A few years ago, my daughter made a raised strawberry bed for a 4-H fair project. This is the first year we will have any large amount of strawberries to do anything with. In the past, we've enjoyed a handful or two on ice cream or just pop them in your mouth warm from the sun! The kids and I love strawberry jam. I ran across this "clean" jam recipe the other day that looks super easy and yummy!

Strawberry Chia Refrigerator Jam
Prep Time:5 Min Cook Time:4 Hr
Ingredients
  • 16 oz. fresh strawberries, stems removed
  • juice of 1/2 of a lemon
  • 3 T chia seeds
  • 2-3 T 100% pure maple syrup
Instructions

    In a food processor, pulse strawberries to puree. I like chunks of strawberries in my jam so I don't process them until completely smooth. Process to the desired smoothness.

    Pour into a small mixing bowl and stir in lemon juice, maple syrup and chia seeds.

    Transfer to a glass container with an airtight lid.

    Cover and refrigerate for about 3-4 hours or until thickened to the desired consistency.

    Enjoy on toast, in yogurt or straight from the jar!
This one looked like a fun afternoon treat too!!

Strawberry Dole Whip Recipe

(serves 4-5)
  • 1 cup sliced frozen strawberries (120g)
  • 1 cup frozen raspberries or more strawberries (120g)
  • level 1/4 cup milk of choice or canned coconut milk (60g)
  • pinch uncut stevia OR 1 1/2 tsp sugar or sweetener of choice
  • 2 tsp lemon juice
  • 1/16 tsp salt
Strawberry Dole Whip Recipe: Combine all ingredients in a blender and blend until smooth. Scoop out and eat OR put in a plastic bag and freeze ten minutes, then cut a hole in the bag’s edge and squeeze out in a swirl. (Or you can use a Yonanas machine if you have one – I used the bag method.) The addition of lemon might sound strange, but it really makes the recipe!
